White teas are not fired or rolled like other teas and are the least processed of the types of tea. White teas have less bitterness than other teas and are more forgiving of brew time and water temperature than green tea. Compared to other teas, white teas are low in caffeine and contain high concentrations of anti-oxidant polyphenols and l-theanine amino acid. Tea color will be light and infusion time is 3-4 minutes.

Green Teas- Green tea refers to a broad class of teas that are processed with the intention of preserving the tea leaf’s green character and low degree of oxidation. Green teas are heated (often roasting or steaming) soon after harvest to prevent the leaf oxidation. Within the broad category of green tea you will find vast differences in flavor and aroma. Tea color is typically light green to green and infusion time can vary by each individual tea but averages at 3-4 minutes.

The cultivation and manufacture of classic oolong teas are restricted to a small area of southeastern China’s Fujian and Guangdong provinces as well as the island of Taiwan. Oolong tea is widely consumed in Southeatern Asian countries and in Japan where it is prized for its cholesterol reducing and weight loss function. The oolong tea category is defined as a group of semi-oxidized teas whose manufacturing style ranges between green and black tea. Research conducted in Japan, China and Taiwan report that oolong tea is rich in anti-oxidants such as theaflavin, tea catechin and tea polysaccharides. Tea color can range from green to amber/brown depending on the manufacturing process. Infusion time is 3-4 minutes.

Black tea originated in China where it is referred to as “Hong Cha” or red tea due to the reddish infusion color typically yielded by this category of oxidized teas. The profile of a black tea including its infusion color, body, strength, aroma and flavor depend on the tea bush variety, the season of harvest, the elevation of the tea garden and the degree of the tea leaf oxidation. Tea color can be light amber such as 1st Flush Darjeeling from India or can be a dark red to black from China. Infusion time is 4-5 minutes.

The geographic origin of pu-erh (pronounced pooer) is located in China’s Yunnan Province within the areas of the Lancang river basin. Pu-erh tea has more than 1,750 years of recorded history dating back to China’s Three Kingdom period. Chinese doctors consider pu-erh as a tea that dispels or cleanses the body of fat and toxins from meat and oily foods. Pu-erh tea is regarded as the best amoungst all teas for its body slimming function. Pu-erh tea can be divided into two distinct categories green pu-erh and black pu-erh. The color is a rich dark plum or amber green. Infusion time ranges from 2-6 minutes depending on strength preference.

Chai means tea in Hindi and is derived from the word cha which means tea in many eastern languages. Masala chai is a spiced black tea latte which is believed to have originated in India. Traditional Masala chai is a blend of spices and black teas simmered in water, milk and sugar. Masala chai can be steeped like black tea as well. Maghreb mint is excellent as an alternative to traditional chai. Prepared the same way, the minty chai is refreshing and spicy. Average infusion time is 5 minutes.
